<p>Oprah is all about living your best life, so when the opportunity came along for her and her staff to try to be vegan for a week in “The Vegan Challenge,” they took it. She showed the process and results on February 11 with guests Kathy Freston (“The Veganist”) and Michael Pollan (“Food Rules”). But you don’t have to be a vegan (no meat, no milk, no animal anything) or vegetarian (no meat, may or may not be dairy, eggs or fish) to eat better, you just have to incorporate more fruits &#038; veggies in every meal. If you want to slowly add more fruits and vegetables in your diet, Oprah.com is chockfull of ideas on how to do that from SUPERFOODS to EATING BETTER AND SLASHING YOUR GROCERY BILL, which Evert Fresh has been preaching for years. One hint from New York Times food columnist Mark Bittman is to utilize your freezer to extend the life of food and save money by buying in bulk. He also says you can turn fruit that’s going bad into smoothies or add to oatmeal for an added boost.<br />

<p>Next time you throw out rotted fruits or vegetables, think about how much energy was wasted getting them to your grocer, your table and, finally, your local landfill. It takes about 1.4 billion barrels of oil to grow, harvest, preserve, package and transport the U.S. food supply. Vegetables require the most energy to transport (and process), which means letting them rot wastes even more energy. We also waste a lot of energy getting rid of rotten food. As a country, we grow far more food than we need (on average 3900 calories per person per day) and much of it never gets consumed. Blogger Jonathan Bloom writes about wasted food, why it matters and why we should care at wastedfood.com.
